Chicken kebab « satay » with Peanuts sauce
Preparation time: 30 minutes (avec with electric blender)
Cooking time : 15 minutes
Marinating time : minimum 1hour (up to 24h)

Ingredients / chicken preparation
500 g chicken breasts, cut to do kebabs
Marinate the chicken for 1 to 24 hours in the following marinade:
In a blender or mortar (or you can do it only with your hands….):
- 2 stalks lemongrass (1/4 cup) (hacked)
- 2 shallots
- 3 garlic cloves
- 1-2 small red chillies (depending if you
like it hot!)
- 1-3 cm galangal or ginger (depend on your
taste or what you find in your favourite store)
- 1 tsp Tumeric (powder, the yellow stuff)
- 1 tbsp coriander seeds (grounded)
- 2 tsp cumin (grounded)
- 3 tbsp soy sauce
- 2 tbsp fish sauce (can be replaced by more
soy sauce…)
- 2 tbsp vegetable oil
Once marinated, you prepare your kebabs which you can grill
on your braai or in the oven or in frying pan for 10-15 minutes, depending on
their thickness.
Peanut sauce
(Prepare it minimum 1 hour before serving)
In your blender/mortar you mix:
- 1 cup peanuts (unsalted) blend it first!
- 1-2 garlic cloves
- ½ tsp soy sauce
- 2 tsp sesame oil
- 1 tbsp brown sugar or honey
- 1-2 tbsp fish sauce (can be replaced by
more soy sauce)
- ½ tsp tamarin paste or lime juice
- ½ tsp cayenne pepper (or fresh chilly)
Mix all ingredients and then add:
- 1 dl coconut milk
Once mixed, leave it for an hour to allow the peanuts to take on
the milk.
